pancake oatmeal

a quick, easy, delicious and nutritious brekkie

so if you’ve followed my instagram the past two months, you know i have a slight obsession with pancakes. however, i’m lazy and bad at stoves. (ovens are fine – stoves, not so much.) i still wanted the flavor of my fruity, chocolatey pancakes, so i made a simpler version – all the fun and none of the fire hazard.

– 1.5 cup oats (i used plain oats mixed with organic maple/brown sugar oatmeal packets, but use whatever you’d like)
– .75 cup water or almond milk

– 1 tbsp peanut butter powder

– 1 banana

– 3 large strawberries

– .5 cup bluberries

– .25 cup chocolate sauce (vegan, of course!)

– .25 cup maple syrup

– sprinkle of chia seeds

directions: mix pb powder with oats. add liquid and microwave as usual. slice banana and strawberries. use them and the blueberries to top the cooked oatmeal. drizzle sauce and syrup over the top and finish with chia seeds.
