vegan tortilla pizza

  
today i was in the mood for one of my favorites: tortilla pizza. i usually make three but we only had the one tortilla, so i also had an ‘everything’ bagel with peanut butter.

toppings: prego pizza sauce, 1/2 red bell pepper, 1 green onion, 5 cherry tomatoes, 2 oz black olives, spinach

directions: preheat oven to 500º on the BROIL setting. chop the pepper, onion, and tomatoes into small pieces. spread sauce on tortilla, then add toppings. broil for 2-3 minutes on top rack for a crispy edge. alternatively, broil for 5 minutes on middle rack for a slightly softer edge. slice into fourths and enjoy!!
