every time i eat sweet potatoes it’s either baked with maple syrup and spices or in the form of fries. today i thought i’d go out of my comfort zone and make a savory sweet potato dish for breakfast!!
ingredients: 3 sweet potatoes (baked), 2 cups water, broccoli, cauliflower, carrots (i used a green giant veggie bag), 1/4 cup spinach, garlic or garlic powder to taste, 2 tbsp pico de gallo.
directions: heat the sweet potatoes in the microwave if they were previously refrigerated, or bake them if fresh. while they heat, boil water on the stove and then reduce the heat to medium low. add the broccoli, cauliflower, and carrots to the water, making sure they are covered, and place a lid on the pot to steam the veggies. when the veggies start to get soft, add the spinach and garlic and wait for the spinach to wilt. plate the sweet potatoes and remove spinach from pot carefully, placing it on the potatoes as a garnish. drain the rest of the veggies and plate. top with pico de gallo and enjoy!!
