there  are cute old ladies playing mah jongg at the table next to me and it makes me so happy *^^* today’s topic: dreams. i have some theories about them and a lot of weird experiences with them. first theory: i have dreams about the last or most important thing i thought about before sleeping. second: i have weirder dreams when i sleep in the early morning (6 am ish) or during the day. third: i have more accurate prophetic dreams when i read more.

prophetic dreams? that’s right. i have dreams about things that happen later – not just the everyday types of things that probably would have happened whether i dreamed them or not, but detailed dreams about things that happen years after i forgot the dream. the most vivid example was when i was in first grade. i had a six-month series of dreams about two people i wouldn’t even meet for another year, and it predicted the next eight years of our relatioships. i know many christians would dismiss something like this as either a vivid imagination (i read seven plus books a week back then, hence the third theory), coincidence, or even demons messing with me. however, i have to believe they come from God because a) they usually involve other people’s actions, which i can’t control and b) when i ignore them or try to prevent them things tend to go poorly.

do you believe God still speaks to us directly through signs? i do because of these and other experiences. however, most christians i know don’t because of hebrews chapter 1: ‘long ago, at many times and in many ways, God spoke to our fathers by the prophets, but in these last days He has spoken to us by His Son, whom He appointed the heir of all things, through whom also He created the world’ (hebrews 1:1-2 esv). i don’t think this means Jesus can’t or won’t use signs, however, just that He will use them more rarely. plus, no one can deny we live in an increasingly secular age, where things like magic, gods, prayer, signs, angels, and demons are considered stories for children.

winter recipes

first let’s state the obvious: i have been gone far too long. this post was supposed to go up the week after thanksgiving but hey, it’s still cold out!!

pumpkin smoothie bowl


ingredients: 2 frozen bananas, 1 ripe banana, 1/4 can pumpkin puree, water if needed

toppings: molasses, coconut, chia seeds, buckinis

directions: blend all ingredients (try blending the ripe banana and pumpkin first!!), then pour into a bowl and arrange toppings. this is a simple, healthy winter breakfast with a classic flavor that can be enjoyed in both warm and cold climates!!

marinated salad


ingredients: baby carrots, red bell peppers, yellow bell peppers, broccoli, cauliflower, black olives, apple cider vinegar, olive oil, black pepper

directions: chop all veggies into small pieces and add to large bowl. in a smaller bowl, mix vinegar and olive oil to taste (i try to use as little oil as possible) and drizzle over veggies. crack pepper over veggies and tossed. keep in the fridge (if you haven’t eaten it all already!).

sweet potato mash


ingredients: large sweet potatoes, maple syrup, brown sugar, earth balance, cinnamon

directions: bake sweet potatoes for 30 mins at 400 degrees fahrenheit. peel, chop, and mash with fork. melt desired amount of earth balance in small dish, then stir in maple syrup, brown sugar, and cinnamon to taste. drizzle over potatoes and stir. this has been my favorite treat since i was a little kid and i still love having it every thanksgiving and christmas!!

coffee date one

i got this idea from bianca (the friendly fig) and i thought i’d try it myself!! my ‘coffee dates’ will usually be posted the day i actually have the coffee, but finals are coming so this one is a day late.

this wednesday i had a soy toffee nut latte – it’s become my cold weather fave. the great thing about starbucks is that it’s easy to create vegan options!! also, this starbucks is actually a barnes and noble café, so it serves soup as well, and the option this week was vegan – harvest grain!!

today i’d like to share what i call ‘lazy broke girl hacks.’ i’m in college, so money and motivation can be hard to come by. hopefully this will help you in your times of need!!

1. always diy your nails. i do my own using fake nails from kiss (found at target and cvs) and cutting them into the desired shape and painting them myself. five bucks for a hundred of these, or fifty bucks at a salon? thought so. and the glue is cruelty free!

2. if you follow the above step, carry superglue, a nail file, and scissors at all times. this will ensure that if your nail breaks you’re prepared to keep it classy. (you may also want to carry black or clear polish in case you go mad from the inconvenience of long nails and remove them completely in a fit of rage. pro tip: wetnwild is cruelty free and costs less than a dollar.)

3. ask for gift cards at christmas and your birthday. preferably to starbucks and the nearest grocery store.

4. lift weights instead of doing cardio. it takes less time, it’s not boring, and you get to show off a bit for the wrestlers.

5. if your school or apartment complex has a complimentary gym, use it. religiously.

6. rice and oatmeal are your best friends. cheap, nonperishable, vegan food that you can make in the microwave? hell yes.

7. ask for food instead of gas money if you’re always the chauffeur. your friends won’t kill you or complain, and you won’t be a starving artist.

8. plato’s closet – enough said.

9. wear mostly black. everything will match, it will probably be cheaper, and you’ll always look stylish. let’s face it, it looks less sloppy to show up in black joggers and a black zip-up hoodie than your school’s sweatshirt and the grey senior sweats you live in during finals week.

10. sell everything you haven’t used in six months. not just clothes. mercari is my favorite selling app because you don’t have to guess at the shipping price and you get a preprinted label so you can avoid the hassle paying shipping at the post office and waiting to get paid as reimbursement.

college is crazy, and so is life sometimes. i use these hacks frequently and they’ve made the experience much better for me. let me know if you use any of these yourself or if you have any hacks of your own, and keep watch for more coffee dates in the future. here’s to an affordable, vegan christmas and a happy new year!!


this year’s thanksgiving was packed with delicious food!! i’m the only vegan in the family so i usually eat less at the family meal and more through the rest of the day than your average thanksgiving participant, but it’s still a feast.

first up was this lovely pumpkin smoothie bowl!! as you can tell from my other smoothie bowl post and my instagram feeds, smoothie bowls are my favorite thing to have for breakfast. all the recipes for my photos will be in future posts so stay tuned.

one of my mom’s favorite thanksgiving recipes is this marinated salad. vegan, colorful, and delicious, and of course guilt-free!!

next, the traditional sweet potatoes. just switch out honey and butter for maple syrup and earth balance and you’ve got a sweet holiday treat. no turkey on this plate!!

a few hours after the main meal i wanted some warm food, so i quickly heated up some amy’s lentil soup. at less than $3 a can, these protein filled soups are perfect for a college student on a budget!! just make sure the back says ‘ingredients (vegan)’ as some soups may contain meat or dairy.

no holiday is complete without at least one fatty dessert, so i grabbed some nondairy ben&jerry’s while black friday (black thursday?) shopping at target (this was a mistake). the pb&cookies flavor is my favorite, but i’ve been in a chocolate mood lately.

i hope your thanksgiving was filled with vegan food, family fun, and relaxation!! always be grateful for your blessings, no matter what the day of the year is.

pumpkin pie oatmeal

fall is definitely the best season for oatmeal, and this year i wholeheartedly hopped on the pumpkin bandwagon as well. another pumpkin recipe is up on my blog from earlier this month, inspired by caitlin shoemaker. (who knows, if starbucks ever makes their pumpkin spice mix vegan i might have that as well!!) sadly i didn’t have ripe bananas on hand, but if you do, chop them up and add them as a topping for an even sweeter pumpkin pie taste.

ingredients: pumpkin puree, oats, water or plant milk, agave, nutmeg, cinnamon, turmeric.
toppings: chia seeds, coconut, buckinis, molasses.

mix together all non-topping ingredients in a bowl and microwave on MEDIUM heat for 5 minutes for a creamy texture. if your microwave doesn’t have heat settings, cooking the oats on the stove will produce much better results. arrange toppings as you like, and enjoy!! this is the best way to get out of bed on those chilly fall mornings, and the filling grains and starches will get you through work or school with tons of energy.

“candy corn” parfait

hey guys! apparently it’s been over five months since my last post *gasp* i’m back in school, and i worked two jobs over the summer, so that’s why, but i’m going to try to make time for at least one post a week.

first, some life updates: as you can see in my menu (like my new theme?), i have created a fitness account on instagram!! follow me if you want workout and food inspiration, and join me on my journey. in other social media related news, i deleted my facebook account (permanently) because i feel it has gotten to a point where, as much as we want to deny it, it lives up to its stereotype of being a waste of time and a cause of bullying and stress. i’ll add a link here when i write a post about it later this week. finally, i have become part of the marketing team for the university of mary’s collegiate deca chapter, marauders on business. if you currently go or went to umary, follow us on instagram, twitter, and facebook for all the updates!

now to the point of this post: i have been obsessed with lifestyle videos on youtube recently, so over fall break i redid my room and made a lot of tasty fall inspired recipes!! i’m going to share one i adapted from caitlin shoemaker (ig: @frommybowl). her video shows how to make a candy corn themed parfait that has the colors of the sadly nonvegan childhood treat we all know and love, and tastes like fall in a jar. i changed the recipe slightly to use vegan yogurt instead of homemade vegan whipped cream for two reasons: i’m lazy, and “parfait” equals “yogurt” in my brain.

this tasty fall treat looks even better on my mom’s cute dining room table!!

ingredients: two frozen bananas, two fresh ripe bananas, 1/2 tsp turmeric, 1/4 cup chia seeds, 3/4 cup plant milk or water, 1 tsp pumpkin pie spice, 1/2 tsp vanilla extract, 1/2 tbsp maple syrup (organic tastes better!), 1/2 cup pumpkin puree, vegan vanilla yogurt (i used the “so delicious” brand).

directions: for the yellow banana ice cream layer, blend the fresh bananas until smooth, then chop the frozen bananas and blend them in as well. blend in the turmeric and add more if needed to achieve a yellow color. the turmeric will change the color of the ice cream without changing the flavor. you can add vanilla extract here if you don’t like the taste of plain banana ice cream. place in the freezer. for the orange pumpkin chia pudding layer, mix the chia seeds, plant milk, pumpkin pie spice, vanilla extract, maple syrup, and pumpkin puree in a glass container and refrigerate for at least an hour. this layer can also be prepared the night before for a thicker texture. once the banana ice cream and chia pudding are the right consistency, layer them in a mason jar, then add the yogurt on top for the white layer. serves two in mason jars, or four in small glasses.

if you’re looking for a filling, sweet, nutritious breakfast option, i highly recommend smoothie bowls! they can be made in all colors and flavors and you can have just as much fun with the toppings as a kid at the froyo stand. today i’m going to share my recipe for a peanut butter smoothie bowl.

ingredients: four ripe bananas (you can always add more!!), peanut butter powder to taste, strawberries, blueberries, dates, buckinis, cacao nibs, chia seeds, coconut.

directions: blend the bananas until smooth. add pb powder to taste ( i used about a tablespoon) and blend.

pour the mixture into a bowl. next, chop up the strawberries and dates. add your fruit and other toppings to decorate the smoothie and enjoy!!
